Who says eating vegan must be a drab affair? Definitely not I! Below is a simple and fulfilling breakfast recipe that will get you ready to go for the day. It incorporates a product near and dear to my heart called “JUST egg” (https://www.ju.st/en-us/products/consumer/egg). You can (usually) find it at market retailers in the egg section, but you can check their website to locate stores closest to you. This product is made especially for those who miss scrambled eggs. Now, you can have that same taste without the negative impact! Sounds like a win-win to me.
Breakfast Scramble
- 1 mini/small Russet potato, cubed
- 1/4 yellow onion, diced
- 3 small Crimini mushrooms, sliced
- 1 large leaf of kale, chopped
- 1 – 2 cloves garlic, minced (your preference)
- 1/2 – 3/4 cup of “JUST egg” egg product
- 1 Tbsp vegetable oil (or veggie broth for oil-free)
- Salt and pepper to taste
- Heat a large skillet over medium-high heat. Add oil and then add potatoes, frying until they reach a golden crust. This can take 5 – 8 minutes.
- Add onions and saute until translucent, 3 – 5 minutes.
- Add mushrooms and garlic, then saute for 1 – 2 minutes. Add kale and saute until kale wilts slightly.
- Add JUST egg and mix all components until the egg firms up into a “scrambled” consistency.
- Plate and add salt and pepper to taste. Add toasted whole wheat bread with vegan butter and/or jelly, and garnish with a small serving of fruit. (Pictured is sliced banana topped with chia seeds.)
Ta-da! You have just made a hearty breakfast to start your day! Feel free to customize as you desire, depending on what vegetables you have on hand.
