Marble Banana Bread

Vegan AND gluten-free? Sold! This decadent marble banana bread is more like a cake, without the addition of any refined sugars or flours. My suggestion? Top it with chocolate chips and eat it with a spoon! Let’s put those dark, overripe bananas to good use and make something to satisfy those chocolate cravings without the guilt.

Marble Banana Bread

  • 3 medium bananas, dark and overripe
  • 4 Tbsp unsweetened applesauce
  • 1/4 cup smooth peanut butter (or almond butter sub. for peanut allergy)
  • 1/2 cup coconut flour
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup vegan chocolate chips (I use Enjoy Life brand)
  • 2 Tbsp unsweetened cacao powder
  • Olive oil cooking spray
  1. Preheat oven to 350°F. Place a wide strip of parchment paper into a 9″ x 5″ loaf pan and spray with a small amount of cooking spray.
  2. Peel and mash bananas with a fork in a large bowl until smooth. Add applesauce and peanut butter, then mix to combine. (You can also use a hand mixer for quicker results.)
  3. Add coconut flour, vanilla extract, baking soda, and salt to the bowl and mix to combine.
  4. Divide the batter in half, placing one half in another bowl. To one half, add the cacao powder and mix thoroughly.
  5. Alternate adding spoonfuls from each half in dollops into the lined loaf pan. Do not mix the halves together once in the pan in order to maintain the “marble” appearance.
  6. Smooth down the mixture evenly and top with chocolate chips.
  7. Bake for 30 minutes.
  8. Once finished baking, let rest for at least 30 minutes before carefully removing bread from the pan and placing it on a cutting board. As stated before, this is more like a cake and is best enjoyed with a spoon and a big glass of plant milk! Enjoy!
