Vegan AND gluten-free? Sold! This decadent marble banana bread is more like a cake, without the addition of any refined sugars or flours. My suggestion? Top it with chocolate chips and eat it with a spoon! Let’s put those dark, overripe bananas to good use and make something to satisfy those chocolate cravings without the guilt.
Marble Banana Bread
- 3 medium bananas, dark and overripe
- 4 Tbsp unsweetened applesauce
- 1/4 cup smooth peanut butter (or almond butter sub. for peanut allergy)
- 1/2 cup coconut flour
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup vegan chocolate chips (I use Enjoy Life brand)
- 2 Tbsp unsweetened cacao powder
- Olive oil cooking spray
- Preheat oven to 350°F. Place a wide strip of parchment paper into a 9″ x 5″ loaf pan and spray with a small amount of cooking spray.
- Peel and mash bananas with a fork in a large bowl until smooth. Add applesauce and peanut butter, then mix to combine. (You can also use a hand mixer for quicker results.)
- Add coconut flour, vanilla extract, baking soda, and salt to the bowl and mix to combine.
- Divide the batter in half, placing one half in another bowl. To one half, add the cacao powder and mix thoroughly.
- Alternate adding spoonfuls from each half in dollops into the lined loaf pan. Do not mix the halves together once in the pan in order to maintain the “marble” appearance.
- Smooth down the mixture evenly and top with chocolate chips.
- Bake for 30 minutes.
- Once finished baking, let rest for at least 30 minutes before carefully removing bread from the pan and placing it on a cutting board. As stated before, this is more like a cake and is best enjoyed with a spoon and a big glass of plant milk! Enjoy!
