Miss the taste of caprese but don’t want the expense of mozzarella? Look no further than these tofu caprese toasts! With a quick swap for sliced, extra firm tofu and kosher salt, this combination will satisfy your craving for the classic recipe. I find it difficult to stop at just one!
Tofu Caprese Toast
- 2 slices bread of choice, toasted (I prefer a bread with a hard crunch like French bread or sourdough)
- 1 vine tomato, sliced
- 1/4 block extra firm tofu, drained and sliced
- 1 Tbsp extra virgin olive oil
- Fresh basil leaves, whole or chopped
- Kosher salt, to taste
- Freshly ground pepper, to taste
- Toast bread to desired crunchiness in toaster or toaster oven.
- Place toast on a plate and add 1 slice of tofu on top of each toast. Add two slices of tomato on top of each tofu slice.
- Sprinkle kosher salt and fresh ground pepper to taste over tomatoes. Drizzle small amount of olive oil over tomatoes.
- Garnish with whole fresh basil leaves OR chop basil in a chiffonade style (take a stack of basil leaves, roll like a cigar, and slice while rolled to create ribbons).
- Enjoy!
