Easy Tabbouleh Quinoa Salad

Seeing how the holidays celebrate the holiness of comfort foods, a light and quick meal can be a remedy in itself! With only a few ingredients and a generous amount of nutrients, this tabbouleh quinoa salad will refresh you just in time for all those decadent desserts. You can even make it as a side dish for your main course!

Recipe – Easy Tabbouleh Quinoa Salad

  • 1 1/2 cup cooked quinoa, cooled
  • 1/2 large cucumber, diced
  • 1 medium vine ripe tomato, diced
  • 1 cup fresh parsley, minced
  • Juice of 1/2 large lemon, to taste
  • 2 Tbsp olive oil (optional)
  • Generous pinch kosher salt, to taste
  • Generous pinch fresh ground pepper, to taste
  1. Cook quinoa according to package instructions. Place in a bowl, cover, and set in fridge to cool.
  2. In a large bowl, add the rest of the ingredients and mix well. Once quinoa is cooled, mix into salad to combine.
  3. Chill in fridge for 30 minutes.
  4. Enjoy!
