Spicy Tofu Peanut Noodles

Looking for an easy spicy noodle dish with delicious peanut sauce? Look no further! This is a great recipe for a quick meal and ideal for using up any expiring vegetables or tofu in your pantry. Fresh, frozen, or canned vegetables can be used. I also highly recommend using a flavor-infused tofu of your choice – it’s a game changer! For the recipe listed, it’s my own version created from pantry remnants, but feel free to customize to your liking. Time to get creative! 🎨

Spicy Tofu Peanut Noodles 🍜

  • 1 block flavor-infused -OR- plain extra firm tofu, drained and pressed
  • 1 14 oz. bag of mixed frozen vegetables, or fresh/canned equivalent
  • 1 14.5 oz. bag of pre-cooked ramen noodles, or dry equivalent
  • 1/3 cup natural peanut butter
  • 1/4 cup low-sodium soy sauce
  • 1 Tbsp apple cider vinegar or rice wine vinegar
  • 1 large clove of garlic
  • 1 tsp ground ginger
  • 2 Tbsp maple syrup
  • 2 Tbsp lime juice
  • 1/2 tsp crushed red pepper, to taste
  • 1/3 cup water
  • Vegetable oil for sautΓ©ing
  • Sesame seeds for garnish (optional)
  • Chopped green onion or lime wedges for garnish (optional)
Eat, Drink, and Be Spooky!
  1. Prepare the noodles. If preparing from dry, cook according to box instructions. If using pre-cooked ramen noodles, rinse under hot water in a colander until thoroughly heated.
  2. Cut tofu into small cubes and set aside. You can also crumble it into a medium bowl with your hands for a more integrated texture.
  3. If you are using fresh or frozen vegetables, steam using a steamer basket on the stove. Fresh vegetables steam within 5 minutes while frozen will take longer (~ 8 minutes). If using canned vegetables, skip this step.
  4. In a small blender (like an Oster smoothie blender or Magic Bullet), combine peanut butter, soy sauce, vinegar, garlic, ginger, agave nectar, red pepper, 2 Tbsp water, and lime/lemon juice and blend until smooth. Add more water 1 Tbsp at a time to adjust to desired consistency. Taste and add desired ingredients to your preferences. Feel free to experiment!
  5. In a large skillet or wok over medium-high heat, add a small amount of vegetable oil and sautΓ© the tofu until slightly browned. Add the cooked vegetables and peanut sauce, sautΓ©ing until hot.
  6. In a large bowl, combine the tofu mixture with the noodles and mix to combine.
  7. Add desired garnishes and enjoy!
