Beet Apple Juice

There is nothing as refreshing as a fresh-pressed juice, especially as the days start to warm up again 🍎! This recipe helps you have fresh juice at home without paying high prices at a juice shop or even needing a juicer. You just need a high-speed blender (I use a Ninja) and some cheesecloth to enjoy your juice today! Let’s get juicing 😁

Beet Apple Juice

  • 4 small to medium beetroots, trimmed of their stalk, cubed
  • 2 stalks celery, roughly chopped
  • 1 organic Fuji apple, cored and chopped
  • Juice of 1 lemon
  • 1 cup orange juice
  • Water, for thinning, if necessary
  1. Add all ingredients to your blender and blend on high until smooth.
  2. Over a large container, secure cheesecloth with tape or a rubber band. Pour mixture onto cheesecloth (this may need to be done in stages).
  3. Wearing gloves, squeeze the juice out of the cheesecloth. Save the fruit pulp in an airtight container (use it for fruit pulp muffins – recipe to follow!).
  4. Store your juice in airtight glass containers for up to 3 days. Enjoy cold over ice with extra lemon (if desired).
Delicious beet juice, ready to blend!
All done! 😁🍎

Easy as… juice! While this may involve a little labor, the results are well worth it. Fresh juice contains high amounts of antioxidants and micronutrients, especially good to stimulate the immune system and get you ready for the day! Stay tuned for a recipe for fruit pulp muffins so you can enjoy the benefits of fruit pulp without creating additional food waste. Have a lovely day! 💚🌱
