You see your bananas slowly browning as the days pass… it happens to all of us. But don’t throw them away when you can treat yourself to some banana bread!🍌 Below is my quick and easy Walnut Chocolate Chip Banana Bread recipe, which may even inspire you to quick brown those yellows! The walnuts and chocolate chips are optional, of course, so swap them out for other toppings or leave the loaf plain – it won’t disappoint. 🍞
Walnut Chocolate Chip Banana Bread
- 3 large bananas, ripe (brown)
- 1/4 cup plant milk, unsweetened/plain (I use almond)
- 1 tsp vanilla extract
- 1 3/4 cup whole wheat flour
- 1/3 cup brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- Chopped walnuts, for topping (optional)
- Vegan chocolate chips, for topping (optional) – (I use Enjoy Life brand)
- Preheat oven to 350°F.
- In a large mixing bowl, unpeel the bananas and smash them with a fork until mostly smooth. Add the plant milk and vanilla extract, stirring to combine. You can also use a stand mixer for this step!
- In another large mixing bowl, combine the rest of the dry ingredients. Add the dry to the wet slowly, folding the contents together gently (set to Low on stand mixer).
- In a lightly greased loaf pan, smooth the bread batter inside and flatten gently with a spatula. Top with walnuts and chocolate chips, if desired.
- Bake for 50-55 minutes. Test for doneness with a toothpick in the center: if it comes out clean, you are done! Enjoy!
