Gluten-free Walnut Brownie Bread

Gluten-free Walnut Brownie Bread

  • 3 medium bananas, dark and overripe
  • 4 Tbsp unsweetened applesauce
  • 1/4 cup smooth peanut butter (or almond butter sub. for peanut allergy)
  • 1/2 cup coconut flour
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup vegan chocolate chips (I use Enjoy Life brand)
  • 2 Tbsp unsweetened 100% cacao powder
  • 1/2 cup raw chopped walnuts
  • Olive oil cooking spray
  1. Preheat oven to 350°F. Place a wide strip of parchment paper into a 9″ x 5″ loaf pan and spray evenly with a small amount of cooking spray.
  2. Peel and mash bananas with a fork in a large bowl until smooth. Add applesauce and peanut butter, then mix to combine. (You can use a hand mixer for quicker results.)
  3. Add coconut flour, vanilla extract, baking soda, cacao powder, and salt to the bowl and mix to combine.
  4. Smooth down the mixture evenly into the loaf pan and top with chocolate chips and walnuts.
  5. Bake for 30 minutes.
  6. Once finished baking, let rest for at least 30 minutes before carefully removing bread from the pan. This is more like a cake and is best enjoyed with a spoon – Enjoy!
