Vegan AND gluten-free, this decadent bread is a dessert without any refined sugars or added oils. Gluten-free Walnut Brownie Bread
- 3 medium bananas, dark and overripe
- 4 Tbsp unsweetened applesauce
- 1/4 cup smooth peanut butter (or almond butter sub. for peanut allergy)
- 1/2 cup coconut flour
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup vegan chocolate chips (I use Enjoy Life brand)
- 2 Tbsp unsweetened 100% cacao powder
- 1/2 cup raw chopped walnuts
- Olive oil cooking spray
- Preheat oven to 350°F. Place a wide strip of parchment paper into a 9″ x 5″ loaf pan and spray evenly with a small amount of cooking spray.
- Peel and mash bananas with a fork in a large bowl until smooth. Add applesauce and peanut butter, then mix to combine. (You can use a hand mixer for quicker results.)
- Add coconut flour, vanilla extract, baking soda, cacao powder, and salt to the bowl and mix to combine.
- Smooth down the mixture evenly into the loaf pan and top with chocolate chips and walnuts.
- Bake for 30 minutes.
- Once finished baking, let rest for at least 30 minutes before carefully removing bread from the pan. This is more like a cake and is best enjoyed with a spoon – Enjoy!
