Vegan Alfredo Pasta Sauce

Happy Halloween, Merry All Hallow’s Eve, Blessed Samhain, my friends! 🎃 Today the veil between the spirit world and the physical is closest, so appease the wandering souls with this offering of dairy-free Alfredo pasta sauce 💀 Dairy is indeed scary, but this recipe is anything but! Read onward for a simple, delicious sauce you can easily customize to your desires 🧡

Vegan Alfredo Pasta Sauce

• 1 16 oz. package soft or silken tofu
• 1 16 oz. package fettuccine noodles (can sub. gluten-free noodles)
• 1 medium yellow onion (~1 cup), diced
• 3 cloves garlic, minced
• 3 Tbsp olive oil (omit for oil-free)
• 1/4 cup nutritional yeast
• 1 Tbsp fresh lemon juice
• 1 cup reserved pasta water
• 1 1/2 tsp Kosher salt, to taste
• 1/4 tsp fresh ground pepper, to taste
• Vegetable oil or vegan butter for sautéing (for oil-free, sub. with vegetable broth or water)
• 1/2 tsp red pepper flakes (optional)
• Fresh parsley, chopped for garnish (optional)

  1. Cook your pasta of choice in a large pot according to package directions (I recommend plant-based protein pasta). Reserve 1 cup of the pasta water once cooked.
  2. While the pasta is cooking, sauté the diced onion and minced garlic over medium heat with a small amount of vegetable oil or vegan butter plus a pinch of Kosher salt until translucent. (Pro-tip: sauté onion for a few minutes first, then add garlic to avoid burning the garlic.)
  3. Drain tofu of excess water and add directly to your high-speed blender (no pressing required). Add the cooked onion and garlic, olive oil (omit if oil-free), nutritional yeast, lemon juice, salt, pepper, and red pepper flakes (if desired).
  4. Add 1 cup of the reserved pasta water to the blender and blend until smooth. Taste and adjust seasonings to your preference.
  5. Add your desires amount of sauce to the cooked pasta in the original pot and mix to combine. Heat over medium-low heat until hot.
  6. Enjoy!
