Happy Halloween, Merry All Hallow’s Eve, Blessed Samhain, my friends! π Today the veil between the spirit world and the physical is closest, so appease the wandering souls with this offering of dairy-free Alfredo pasta sauce π Dairy is indeed scary, but this recipe is anything but! Read onward for a simple, delicious sauce you can easily customize to your desires π§‘
Vegan Alfredo Pasta Sauce
β’ 1 16 oz. package soft or silken tofu
β’ 1 16 oz. package fettuccine noodles (can sub. gluten-free noodles)
β’ 1 medium yellow onion (~1 cup), diced
β’ 3 cloves garlic, minced
β’ 3 Tbsp olive oil (omit for oil-free)
β’ 1/4 cup nutritional yeast
β’ 1 Tbsp fresh lemon juice
β’ 1 cup reserved pasta water
β’ 1 1/2 tsp salt, to taste
β’ 1/4 tsp fresh ground pepper, to taste
β’ Vegetable oil or vegan butter for sautΓ©ing (for oil-free, sub. with vegetable broth or water)
β’ 1/2 tsp red pepper flakes (optional)
β’ Fresh parsley, chopped for garnish (optional)
- Cook your pasta of choice in a large pot according to package directions (I recommend plant-based protein pasta). Reserve 1 cup of the pasta water once cooked.
- While the pasta is cooking, sautΓ© the diced onion and minced garlic over medium heat with a small amount of vegetable oil or vegan butter plus a pinch of salt until translucent. (Pro-tip: sautΓ© onion for a few minutes first, then add garlic to avoid burning the garlic.)
- Drain tofu of excess water and add directly to your high-speed blender (no pressing required). Add the cooked onion and garlic, olive oil (omit if oil-free), nutritional yeast, lemon juice, salt, pepper, and red pepper flakes (if desired).
- Add 1 cup of the reserved pasta water to the blender and blend until smooth. Taste and adjust seasonings to your preference.
- Add your desires amount of sauce to the cooked pasta in the original pot and mix to combine. Heat over medium-low heat until hot.
- Enjoy!
