Easy Vegan Holiday Stuffing (with Gluten-free option)

It’s the holidays and for vegans it can be an extra stressful time πŸ˜… That’s why I try to find options that everyone can enjoy, including my gluten sensitive family members. This recipe can be started only 30 minutes before dinner and is WAY better than any boxed variety you’ll find πŸ˜‰ You can use your favorite wheat bread or substitute with a gluten-free brand (I use SchΓ€r for its hearty texture). Try this out and wow your whole entourage!

Easy Vegan Holiday Stuffing

  • 14 oz. vegan, regular whole wheat -OR- gluten-free bread, cubed (I use SchΓ€r brand)
  • 1/4 cup vegan butter (I use Earth Balance brand)
  • 1/4 cup vegetable oil
  • 2 cups low-sodium vegetable broth (see my recipe to make your own!) or water
  • 1 cup celery, diced
  • 1 cup yellow onion, diced
  • 1 Tbsp dried parsley
  • 1 tsp dried sage
  • 1 tsp dried thyme leaves
  • 1 tsp garlic powder
  • 1/2 tsp dried marjoram
  • 1 tsp salt, to taste
  • Fresh ground black pepper, to taste
  1. Preheat the oven to 350°F. Spread the bread cubes evenly across a sheet pan. Bake for 15 minutes until cubes are dry and toasted. You can also use any leftover dried bread you may have! 🍞
  2. Melt vegan butter and vegetable oil in a skillet over medium-high heat. Add the celery and onion and sautΓ© until vegetables are softened (~5-10 minutes).
  3. Add all the spices and stir, then heat for 1-2 additional minutes. Pour in vegetable broth (or water) and bring the mixture to a boil, stirring occasionally. After it starts to boil, remove from heat.
  4. Transfer the toasted bread crumbs to a large mixing bowl. Carefully pour the cooked celery/onion mixture over the bread cubes. Fold gently until well combined. Cover the bowl and let sit for 5 minutes. Remove the cover, fluff with a fork, and enjoy!
